Black dragon gin

Tough name, but soft on the inside!

Softly sweet with spicy and floral winter notes.

Nice balance and character. Be careful with lychee. The more you add, the sweeter the taste.

INGREDIENTS

  • 30 g lychee (4 pieces)
  • 0,1 g lemon zest or use dried lemon zest
  • 0,3 g orange peel
  • 1,1 g almond
  • 0,9 g coriander
  • 1 pinch nutmeg
  • 0,1 g Liquorice
  • 0,1 g cinnamon
  • 0,1 g lavender
  • 2 pc cardamom
  • 500 ml basic quality Gin

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Peel the lychees, remove the pit and cut into pieces. Carefully put them into the filter. Don’t press; make sure filtration remains possible.

3. Slightly crush the coriander, cardamom, hibiscus, elderflower and rose leafs in a mortar.

4. Add a sniff of nutmeg, cinnamon and licorice. Add the botanicals on top of the lychees.

5. Tear the dried orange peel in small pieces with your fingers and sprinkle on top.

6. Cut the lemon zest in small strips and put them on top.

7. Cover the ingredients with a top filter

8. Add the basic gin.

9. Adjust dripping speed to 1 drip per second. Allow time and gravity to do the work.

A soft and sweet marriage of raspberries, citrus and floral notes. One to share with your (best) girlfriend. Both an aperitif and digestif.

INGREDIENTS

  • 16 g Belgian raspberries (5 pieces)
  • 0,1 g lemon zest or use dried lemon zest
  • 0,3 g orange peel
  • 0,1 g rose petals
  • 0,9 g coriander
  • 0,4 g hibiscus
  • 0,2 g elderflower
  • 2 pc cardamom
  • 500 ml basic quality gin

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Slice the raspberries into pieces and carefully put them into the filter. Don’t press.

3. Slightly crush the coriander, cardamom, hibiscus, elderflower and rose leafs in a mortar.

4. Remove the cardamom shells and add the crushed botanicals on top of the ingredients.

INGREDIENTS

  • 0,7 g angelica root
  • 0,7 g burdock root
  • 8 g juniper berries
  • 0,7 g orange peel
  • 0,3 g camomile
  • 3,1 g coriander
  • 4 pc cardamom
  • 0,1 g cubebe
  • 0,1 g paradise seed
  • 500 ml filtered / bottled water

 

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Crush all the juniper berries with your fingers and put them on the bottom of the filter.

3. Crush the coriander with a mortar and put on top of the juniper.

4. Put the angelica and burdock on top.

5. Crush the Cardemom, cubebe and paradise seed in a mortar and put on top of the ingredients.

6. Slightly crush the camomile with your fingers and add them on top of the ingredients.

7. Tear the dried orange peel in small pieces with your fingers and sprinkle on top of the lemon zests.

8. Cover the ingredients with a top filter.

9. Add the water.

10. Adjust dripping speed to 1 drip per second. Allow time and gravity to do the work.

Serve and drink with tonic.

Keep maximum 2 days refrigerated in a closed recipient.

4. Put the burdock and angelica on top.

5. Crush the Cardemom, cubebe and paradise seed in a mortar and put on top of the ingredients.

6. Slightly crush the camomile with your fingers and add them on top of the ingredients.

RECIPE

3. Remove the cardamom shells and throw them on the bottom of the filter.

4. Add all the ingredients from the mortar in the filter.

5. Cover the ingredients with a top filter

  • 3 pc cumquats
  • 1 pc star anise (use only one part of the star)
  • 1 clove
  • 0.1 g dried thyme
  • 0.1 g rosemary

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Add one piece of a star anise and one clove on the bottom of the filter.

3. Cut 3 kumquats in slices.

4. Fill the filter with the kumquats.

5. Add a pinch of dried thyme and rosemary on top.

INGREDIENTS

  • 30 – 40 g orange pulp
  • 20 g orange zest or use dried orange peel
  • 0,2 g juniper berries (4 berries)
  • 0,2 g vanilla powder (or use vanilla pod)
  • 0,4 g pink pepper
  • 0,5 g coriander
  • 20 g cocoa
  • 500 ml basic quality Gin

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Weigh 20 g of cocoa nibs and place them on the bottom of the filter.

3. Cut an orange in parts and remove the pulp. Cut the pulp in small pieces and put them on top of the cocoa.

4. Slightly crush the coriander, pink pepper, vanilla and juniper in a mortar. Add the crushed botanicals on top of the ingredients.

5. Cut fine zests from the peel of the orange. Slice in strips and put on top.

6. Cover the ingredients with a top filter

7. Add the basic gin.

8. Adjust dripping speed to 1 drip per second. Allow time and gravity to do the work.

4. Slightly crush the cardamom, lemon zest, hibiscus, rose leaves, orange blossom, junipers and orange peel in a mortar. Remove the cardamom shells and add the crushed botanicals on top of the ingredients.

5. Cover the ingredients with a top filter

6. Add the basic gin.
