Dark Woods Gin

Mysterious smokey mist in a dark forest

A real winter treat, both an aperitif and digestif. Discover the soft marriage of smokey, spicy and citrus flavors.

INGREDIENTS

  • 2 g candied ginger
  • 1 pc black cardamom
  • 0.5 g almond powder
  • 0.4 g paradise seed
  • 0.2 g cinnamon
  • 0.8 g coriander
  • 0.1 g liquorice
  • 1 pc black cardamom
  • 1 g orange peel
  • 0.3 g Oak bark
  • 0.6 g cubeb pepper

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Slightly crush the coriander, ginger, black cardemom, almond powder, paradise seed, cinnamon, coriander seeds, licorice, orange peel, oak bark and cubeb pepper in a mortar.

3. Remove the cardamom shells and throw them on the bottom of the filter.

4. Add all the ingredients from the mortar in the filter.

5. Cover the ingredients with a top filter

6. Add the basic gin.

7. Adjust dripping speed to 1 drip per second. Allow time and gravity to do the work.

Gin with Cumquats! Small in size big on taste!

The rich citrus flavors go hand in hand with the spicy notes of anise and clove. Add a pinch of thyme and rosemary, and this creation will stay on your top shelf! An easy recipe.

 

INGREDIENTS

  • 3 pc cumquats
  • 1 pc star anise (use only one part of the star)
  • 1 clove
  • 0.1 g dried thyme
  • 0.1 g rosemary

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Add one piece of a star anise and one clove on the bottom of the filter.

3. Cut 3 kumquats in slices.

4. Fill the filter with the kumquats.

5. Add a pinch of dried thyme and rosemary on top.

5. Cover the ingredients with a top filter

6. Add the basic gin.

7. Adjust dripping speed to 1 drip per second. Allow time and gravity to do the work.

Black Gold Gin – gin with black truffle

Black gold gin

A gin to share with the chosen few.

Not the usual gin. Earthy, spicy and complex flavors. A gin to save for those special evenings with best friends, good stories and fine music.

INGREDIENTS

  • 3,2 g black truffle
  • 2 g candied ginger
  • 1 pc black cardamom
  • 0.5 g almond powder
  • 0.4 g paradise seed
  • 0.2 g cinnamon
  • 0.8 g coriander
  • 0.1 g liquorice
  • 1 pc black cardamom
  • 1 g orange peel
  • 0.3 g Oak bark
  • 0.6 g cubeb pepper

Orangetta Gin

Orangetta

Smells like pim’s biscuits and orangettas, tastes like heaven. 

A pronounced and sweet marriage of oranges and cocoa. Both an aperitif and digestif. Try it pure on the rocks!

INGREDIENTS

  • 30 – 40 g orange pulp
  • 20 g orange zest or use dried orange peel
  • 0,2 g juniper berries (4 berries)
  • 0,2 g vanilla powder (or use vanilla pod)
  • 0,4 g pink pepper
  • 0,5 g coriander
  • 20 g cocoa
  • 500 ml basic quality Gin

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Weigh 20 g of cocoa nibs and place them on the bottom of the filter.

3. Cut an orange in parts and remove the pulp. Cut the pulp in small pieces and put them on top of the cocoa.

4. Slightly crush the coriander, pink pepper, vanilla and juniper in a mortar. Add the crushed botanicals on top of the ingredients.

5. Cut fine zests from the peel of the orange. Slice in strips and put on top.

6. Cover the ingredients with a top filter

7. Add the basic gin.

8. Adjust dripping speed to 1 drip per second. Allow time and gravity to do the work.

Strawberry Fields Gin

Strawberry Fields

Belgian strawberries collide with fresh rhubarb to create a taste you’ll like to try more than once… 

A soft and sweet marriage of strawberries, rhubarb and floral notes. The sweeter the strawberries, the sweeter the gin.

INGREDIENTS

4 strawberries
22 g rhubarb
0.5 g lemon zest
0.8 g orange peel
0.5 g hibiscus
0,4 g orange sweet petals
3 cloves cardamom
1 g coriander
0,5 g rose leaves
0,1 g juniper
500 milliliters basic quality gin

RECIPE

1. Cut the V60 filter up to the estimated height of the ingredients.

2. Slice the strawberries into pieces and carefully put them into the filter. Don’t press.

3. Slice the rhubarb into pieces and put on top.

4. Slightly crush the cardamom, lemon zest, hibiscus, rose leaves, orange blossom, junipers and orange peel in a mortar. Remove the cardamom shells and add the crushed botanicals on top of the ingredients.

5. Cover the ingredients with a top filter

6. Add the basic gin.

7. Adjust dripping speed to 1 drip per second.

8. Allow time and gravity to do the work.

3. Slightly crush the botanicals and add to the filter.

4. Cut the topfilter to the estimated size and put on top of the ingredients.

5. Add the basic gin.
